Hot Chocolate Cupcakes

Another new recipe from The Hummingbird Bakery – Cake Days cookbook.. hot chocolate cupcakes. The recipe calls for instant hot chocolate powder, so they really are hot chocolate flavoured cupcakes. Oreo Cupcakes

I have been searching for a good Oreo cupcake recipe for a while now, and after coming across this one on another blog –A Cup Full Of Cake, I decided to give it a try. A lot of the cupcake bases for Oreo cupcakes tend to incorporate an Oreo within it somehow, but I liked this recipe as it could just focus on a plain chocolate sponge, with an Oreo buttercream frosting instead. I made a mixture of full sized and mini cupcakes – the full sized cupcakes have a mini Oreo stuck on top but I left those off the mini cupcakes (see picture above!) as I thought it might be a little too much for a mini cupcake. Lemon Cupcakes

Even though chocolate is one of the tastiest things in the world, it can be quite rich and sweet, so sometimes when I’m a little tired of eating chocolate flavoured goodness, I tend to use lemon. Lemon is one of my favourite flavours to use when baking because I don’t think I’ll ever get sick of it – honestly, ask any of my friends and they will know how much I love lemon tarts, lemon meringues, lemon anything! Nutella Cupcakes

Part 2 of my baking afternoon with Sophie was spent making Nutella cupcakes. Also known as Hazelnut and Chocolate cupcakes, if you use the generic term for Nutella!

The cupcake is just a standard chocolate base, with a small hollowed out centre section where a dollop of Nutella (or any hazelnut and chocolate spread) was inserted. We decided to place the hollowed out ‘top’ of the cupcake back over the spread, so that it didn’t get too mixed in with the buttercream. Continue reading “Nutella Cupcakes”

I celebrated the New Year with my wonderful friends… and some yummy cupcakes (what else?!). These are chocolate cupcakes with a vanilla buttercream icing.
