Recently, I went on a piped flowers cupcake decoration course and learnt how to decorate four different types of flowers using buttercream icing. The course was run by the same company who I did my 4 week Wilton course with – well worth a class if you’re interested in cake decorating. Wilton Cake Decorating Course – Final Week

I had the final class of my Wilton Cake Decorating course on Monday night, not sure what I’ll do with myself now it’s all finished! We spent the first half of the class learning how to pipe writing and ribbon roses. Piping writing is still tricky, it’s hard to keep it looking neat but it really helps if you have a thin consistency of buttercream to work with. I found that my buttercream wasn’t thin enough, so midway through a letter, the buttercream would break off, so some of my words ended up a bit lumpy when I tried to join them back together. Wilton Cake Decorating Course – Week 2

Last night I went to the 2nd class of the Wilton Cake Decorating course and learnt more about piping techniques – bag positioning and pressure control. It was interesting and I realised, the buttercream comes out much neater and more uniform if you pipe faster. Hot Chocolate Cupcakes

Another new recipe from The Hummingbird Bakery – Cake Days cookbook.. hot chocolate cupcakes. The recipe calls for instant hot chocolate powder, so they really are hot chocolate flavoured cupcakes. Nutella Cupcakes

Part 2 of my baking afternoon with Sophie was spent making Nutella cupcakes. Also known as Hazelnut and Chocolate cupcakes, if you use the generic term for Nutella!

The cupcake is just a standard chocolate base, with a small hollowed out centre section where a dollop of Nutella (or any hazelnut and chocolate spread) was inserted. We decided to place the hollowed out ‘top’ of the cupcake back over the spread, so that it didn’t get too mixed in with the buttercream. Continue reading “Nutella Cupcakes”
