Red Velvet Cupcakes
Red velvet cupcakes and chocolate buttercream = yum!
I decided to have a bit of a baking day today as I recently got a new baking book – The Great British Book of Baking – and thought I would try out some of the recipes (more to come later..) but I hadn’t made red velvet cupcakes for a while and had a bit of a craving!
The red food colouring makes the batter look a bit like ketchup! I had to start a new bottle of red food colouring half way through, not sure why, but it came quite really thick and gloopy.. I just assumed I had bought the same stuff as before! Anyhow, it turned okay in the end and once the cakes were cooked, the red sponge looked deliciously yummy š
I’ve still not used the traditional cream cheese frosting with red velvet cakes (plus I didn’t have any cream cheese) so just went ahead with chocolate buttercream. I tend to mix the butter and icing sugar together by hand at first because when you use a whisk, icing sugar flies EVERYWHERE and creates a big cloud of sugar, which is not nice to inhale! It does take a little bit longer, but once you start adding a bit of milk in, there’s a bit less cloud and its safe to start whisking..
