Goodbye 2010..Hello 2011!


Happy New Year!

I celebrated the New Year with my wonderful friends… and some yummy cupcakes (what else?!). These are chocolate cupcakes with a vanilla buttercream icing. This might have been one of the first times that the chocolate cupcake base has turned out so good – really light and spongy, yum!

I wanted to try out my new piping utensils I got for Christmas (thank you Auntie Chris, Steph & Deanne!) and .. it worked out okay, but then I ran out of buttercream icing to use in the piping bag and had to settle for a spatula instead. Since I’ve seen how some of the bakeries (Lola’s, Buttercup, Magnolia) have done their icing, with big swirly buttercream, I’ve wanted to try it, hence the piping kits for Christmas. The star tips I used were pretty good, especially with a coupler so I didn’t have to change the whole bag everytime I wanted to change the nozzle, but I found out that I need a much bigger star tip to create even bigger swirls. I think they look pretty good for the star tip I used – bit shaky maybe, but it looks edible!

I also used bigger cupcake cases than I usually do.. which works out a lot better because you get much more cake with these than the standard size I used to use, where you’d get less cake than icing!
