Fluffy Pancakes

Whilst this isn’t technically baking, there’s nothing better than a stack of pancakes on a weekend morning. Pain au chocolat

I love croissants. I’ve never thought about making any before now, I thought it looked too fiddly, time consuming and honestly, how much nicer could they be than ones from a nice bakery?  I couldn’t have been more wrong! There’s something about making your own croissants.. they taste different, good different. An experiment – Chinese-style cupcake

Chinese New Year is almost upon us, which means we’ll be soon be celebrating the Year of the Horse and I’ll be back at home, enjoying Mum’s cooking and collecting lai see! And what better excuse do I need than CNY, to experiment with a chinese-style cupcake?

I went a bit outside of the box with this one.. I tried to think of chinese food I like to eat and how it could be turned into a cupcake. Good old fashioned, chocolate cookies

I came across a “Chocolate Crackles” recipe in my Great British Bake Off: How to Bake book and it looked very similar to a standard brownie recipe… but in a cookie form, so I had to try it out. It turned out to be a delicious chocolate cookie, with a nice and crunchy outer layer and a soft, almost gooey centre. Think I’ve found my new favourite chocolate cookie recipe!
