Banana Bread with Chocolate Chips
Does putting fruit in a cake make it any healthier?! Probably not if you’re adding in chocolate.. I came across this recipe for chocolate chip banana bread and decided to give it a go. It seems healthier than most recipes (it came from myfitnesspal!) and uses coconut oil rather than butter/vegetable oil.

Ingredients
- 165g Brown Sugar
- 3 overripe Bananas, mashed
- 2 Eggs
- 3½ tablespoons Coconut Oil, melted
- 125ml unsweetened Almond Milk
- ½ tsp Vanilla Extract
- 1 tsp Cinnamon
- 1 tsp Bicarbonate of soda
- 1 tsp Baking Powder
- 385g plain flour
- 150g chocolate chips
Instructions
- Preheat oven to 180 degrees and prepare a loaf tin (I used a ½lb tin) with coconut oil. If you get any excess, you can always pour it into the cake mix.
- Mix together brown sugar, bananas and eggs. Stir in all other ingredients except for the flour until combined. Add flour slowly until fully incorporated.
- Add in chocolate chips and mix well. Pour mixture into loaf tin and bake for 50 minutes or until golden brown on top and a skewer comes out clean.
- Serve with some ice cream!
