Banana Bread with Chocolate Chips

Does putting fruit in a cake make it any healthier?! Probably not if you’re adding in chocolate.. I came across this recipe for chocolate chip banana bread and decided to give it a go. It seems healthier than most recipes (it came from myfitnesspal!) and uses coconut oil rather than butter/vegetable oil.

Ingredients
  1. 165g Brown Sugar
  2. 3 overripe Bananas, mashed
  3. 2 Eggs
  4. 3½ tablespoons Coconut Oil, melted
  5. 125ml unsweetened Almond Milk
  6. ½ tsp Vanilla Extract
  7. 1 tsp Cinnamon
  8. 1 tsp Bicarbonate of soda
  9. 1 tsp Baking Powder
  10. 385g plain flour
  11. 150g chocolate chips
Instructions
  1. Preheat oven to 180 degrees and prepare a loaf tin (I used a ½lb tin) with coconut oil. If you get any excess, you can always pour it into the cake mix.
  2. Mix together brown sugar, bananas and eggs. Stir in all other ingredients except for the flour until combined. Add flour slowly until fully incorporated.
  3. Add in chocolate chips and mix well. Pour mixture into loaf tin and bake for 50 minutes or until golden brown on top and a skewer comes out clean.
  4. Serve with some ice cream!
