Good old fashioned, chocolate cookies

I came across a “Chocolate Crackles” recipe in my Great British Bake Off: How to Bake book and it looked very similar to a standard brownie recipe… but in a cookie form, so I had to try it out. It turned out to be a delicious chocolate cookie, with a nice and crunchy outer layer and a soft, almost gooey centre. Think I’ve found my new favourite chocolate cookie recipe!

The type of chocolate you use will make or break this recipe, I definitely think using good quality, 70% cocoa solids made all the difference to the chocolately taste.

As with any other brownie recipe, it involves melting chocolate, adding the eggs, butter and sugar. Then, slowly folding in the flour and baking powder. What differs at this stage is you’ll need to refrigerate it for a good hour, until the mixture forms a paste-like consistency. This allows you to roll it into balls, cover it in icing sugar and let it bake into a cookie.

Next time I make these, I’ll be adding in a few chopped hazelnuts, maybe even pistachios to give it a nice crunch!

I won’t be posting the recipe on here due to copyright issues, but believe me when I say, it’s just like a normal brownie recipe with added fridge time. Give it a go and let me know how it turns out.
