Lemon Meringue Birthday Cake

This is a bigger, cake version of the lemon meringue cupcakes I made a few weeks ago – a 3 layer, lemon sponge sandwiched together with lemon curd and covered with meringue.

I doubled my cupcake recipe for the sponge, which was more than enough for 3 layers. I cut down some of the sponge to make it more even, which meant I had to be extra careful to not get crumbs in the meringue covering. Continue reading “Lemon Meringue Birthday Cake”

Doctor, Doctor..

My sister celebrated her first day of no longer being a teenager on Thursday – Happy Birthday Steph – best way to celebrate? With a cake of course! She had to carry this on a long car journey back to Uni, so I hope it made there it one piece and it tasted alright too. Chocoholic Heaven

Jak turned 22 yesterday, so we celebrated with presents, cake and cookies (more of which in another post). After eating most of the devil’s food cake I made at Christmas, he decided he wanted to same cake for his birthday.
