Great British Bake Off is back for another series and I couldn’t be happier, I feel as if my life is complete once again (I wish this wasn’t true, haha!) It’s a great show for baking inspiration and seeing all the different flavour combinations the contestants keep up with. This year, I’m going to try and and bake something from each week of the show (setting a big goal there, I only managed one week last year..oops).

Does putting fruit in a cake make it any healthier?! Probably not if you’re adding in chocolate.. I came across this recipe for chocolate chip banana bread and decided to give it a go. I discovered a new blog this week when I was searching for recipes that used buttermilk. I had some leftover from the doughnuts and didn’t want it to go to waste, after some googling, I came across Averie Cooks – a well written, beautifully photographed blog with some pretty good recipes to boot.

This is one of my all time favourite cakes, very light and full of flavour. When I found this recipe by Christine, I had to try it out – homemade is much nicer than the shop-bought version! The cake gets is green colouring from pandan leaves (the shop-bought ones tend to have artificial colouring to make it super green). Essentially it’s an angel food cake, except it’s flavoured with pandan rather than vanilla. Not all that difficult to make, as long as you get the egg whites right.. Lemon is one of those flavours that reminds me of summer and I made this tasty lemon drizzle cake over the weekend when we were still enjoying the bout of sunny weather that seems to have deserted us already. It is to be expected, we are in the UK after all!
