Chocolate Shortbread

It’s been a while! Baking had been put on hold due to a trip to Hong Kong for Chinese New Year.. I’ve still not properly gotten back into it, but I forgot to post this before I left, so here it is…

So.. chocolate shortbread (so tasty), I haven’t really come by a recipe for it that doesn’t make the shortbread really dry after, but this recipe was pretty good, the shortbread was a little crumbly but did not leave a very dry taste after! It was from my new book – The Great British Book of Baking – based on the BBC series The Great British Bake Off , which was one of my favourite shows to watch! The book is brilliant, it’s not just cupcakes and cakes but covers EVERYTHING under baking – pies, pastries, bread, desserts etc etc. Definitely would recommend it.

Back to the shortbread – the recipe was very simple to follow and incredibly quick to make – maximum preparation time of 5 – 10 minutes and then into the oven for 25 minutes. I was careful to keep checking on it towards the end because cocoa can end up burning a little if it’s left in the oven for too long.

The recipe also suggests using some lemon zest to make a lemon shortbread, so will be trying that one soon!

I’ve just signed up for a Wilton Cake Decorating Basics course as well, starts in March and I’m really looking forward to it! Hopefully I’ll learn a lot and improve my decorating skills, which to be honest aren’t exactly the best!
