Lemon Meringue Birthday Cake

This is a bigger, cake version of the lemon meringue cupcakes I made a few weeks ago – a 3 layer, lemon sponge sandwiched together with lemon curd and covered with meringue.

I doubled my cupcake recipe for the sponge, which was more than enough for 3 layers. I cut down some of the sponge to make it more even, which meant I had to be extra careful to not get crumbs in the meringue covering. Continue reading “Lemon Meringue Birthday Cake”

Liverpool FC Cupcakes

A few weeks ago, I received my first order (very exciting!) for a dozen vanilla and rose cupcakes for a birthday. I was given the opportunity to decorate them however I wanted – as long as they were vanilla and rose flavoured. As Pauline, the lady who ordered the cakes, is a big Liverpool supporter, I decided to make some football/LFC themed cupcakes and alongside them, a couple of ‘girlier’ cupcakes. Doctor, Doctor..

My sister celebrated her first day of no longer being a teenager on Thursday – Happy Birthday Steph – best way to celebrate? With a cake of course! She had to carry this on a long car journey back to Uni, so I hope it made there it one piece and it tasted alright too.
