Mini Cakes
These little cakes wouldn’t look out of a place at a tea party, perfect with some dinky sandwiches and a cuppa tea. They’re a nice alternative to a cupcake if you’re looking for something a little different.
I had some leftover sheet cake (the remainder of the Fireman Sam cake), so used a small cutter to cut out 6 circles to create these mini cakes. I sandwiched them together with some lemon curd and leftover vanilla frosting before covering the entire cake with sugarpaste.
If you want to know how to make the sugarpaste roses, I’ve posted a quick tutorial here. There’s definitely a host of decorations that could be used and you don’t always have to use sugarpaste to decorate. I’ve seen some beautiful ‘naked’ cakes (i.e. not covered with any sugarpaste or frosting), finished with a buttercream rose on top.
Why not try out these mini cakes instead of cupcakes next time an occasion presents itself?
