Strawberry Milkshake Cupcakes
My first foray into a classic drink-turned-cupcake recipe comes from the new Hummingbird Bakery, Home Sweet Home Cookbook. I got it for an absolute bargain of £7.49 in Sainsbury’s if you’re interested. I think this cupcake is one they sold in one of their specials – might have been the carnival range? In any case, if you like the fake strawberry flavour this is the cupcake for you!
For legal reasons I can’t just copy the recipe directly onto my blog, but it is a simple recipe to follow. It uses strawberry milkshake powder (real strawberries doesn’t give it that taste), mixed in with milk – to get the actual strawberry milkshake. This is then added to a normal, plain cake mix. Easy as that.
The frosting also follows the same principle – standard butter and icing sugar mix, combined with a strong strawberry milkshake mix. To the point where the mix is a hot pink colour, as opposed to the typical baby pink. I found it a bit too sweet for my taste, so decided to use a bit less icing sugar and added a bit of salt.
To decorate, the cookbook suggests buying edible straws – genius, just like a real drink! I decided to make my own using fondant. Roll out 2 pieces of fondant in whichever colours you prefer, line them up next to each other and twist together. I found that it didn’t harden all that much before I put them on the cupcakes, so it might be idea to leave them overnight in the fridge/somewhere cool so they do.
You definitely get a feel of strawberry milkshake when eating these cupcakes, the flavour comes through nice and strong, which is perfect for fake strawberry lovers (like me!), but perhaps not so good for real strawberry aficionados.
There’s quite a few interesting looking recipes in the new cookbook, not just cupcakes, so I’ll be giving those a go in the next few weeks and updating the blog with my results – good or bad. Chocolate Truffle Cookies anyone?
