Chocolate Orange Shortbread
Time for another Christmas recipe! This week it’s chocolate orange shortbread, but be warned, these treats are incredibly more-ish, so I’d suggest making a few extra (even if it’s just for yourself..)
These have just a hint of orange, but you can always use more orange zest or (melted) Terry’s chocolate orange if you want more of an orangey kick.
Make sure you use real butter as well, rather than Stork, it gives it a much better flavour! I read in one of my baking books that the cornflour in shortbread helps add the crunch – these definitely have a good crunch!

Ingredients
- 200g unsalted butter (room temp.)
- 100g caster sugar
- 1/2tsp vanilla extract
- Zest of 1 orange
- 250g plain flour
- 40g cornflour
- 75g chocolate chips
- 50g plain chocolate, melted (for piping or dipping)
Instructions
- Beat butter until softened, then add sugar and cream until light and fluffy
- Add vanilla extract and orange zest and combine
- Sift together plain flour and cornflour, adding to butter mixture and combine until it becomes a dough
- Wrap in clingfilm and leave to chill in the fridge for 20 minutes
- Once chilled, roll it out, then cut into smaller pieces - using whatever cutter you please
- Preheat the oven at 190 degrees and bake for 18-20 minutes, taking them out of the oven before it changes colour
- Leave to cool. In the meantime, melt the chocolate in the microwave, in 10 second blasts, stirring each time until melted
- Once shortbread has cooled, either pipe or dip the chocolate onto the shortbread and serve
