GBBO – Egg Custard Tarts
The Great British Bake Off is back! Ok, so it’s been on for a few weeks now and I still need to catch up on the latest episode but I thought I might try out a few of the bakes they do on the show and share them on here (success or not..)
First up, egg custard tarts from week 4. This was the technical challenge based on Paul Hollywood’s recipe, luckily for me, I was able to follow the entire recipe unlike the bakers in the tent! BBC Food have put up the recipe and instructions here.
The pastry is just a straightforward recipe, although I did find it a little sticky so added extra flour. The recipe calls for a 4.5in fluted cutter, but the largest size I had was 3.5in so I went with it anyway, my tarts turned out a little on the smaller side as expected which meant I had a lot of custard leftover for another batch!
I noticed one of the contestants had the ingenious idea of lining the muffin tin with greaseproof paper strips to make it easier to remove the tarts at the end, so decided that would be the best plan and prevent the stress of trying to get the tarts out of the tin. The custard itself is simple to make, although I do have a lot of egg whites leftover so may attempt the angel food cake next.
I followed all the oven instructions and success! I didn’t end up with a soggy bottom and the custard didn’t sink either.
These tarts are definitely best when served warm. I stored mine in an airtight container but found after a day, the pastry was a little soggy, so perhaps the best idea is just to scoff them all before they even need storing…
