Roses are red..
Love it or hate it, Valentine’s Day makes for a great theme for cupcakes; we had a bake sale at work for UNICEF, so I decided to fully embrace the love theme. Perhaps a little too much.. I decided on red velvet cupcakes; what other cupcake could be more appropriate for V-Day cheesiness?
I like use the Hummingbird Bakery recipe for my red velvets, the best I’ve tried so far. The colour of the red really pops and luckily, I had 1 bottle of the infamous Dr Oetker red food colouring left, which is the best colouring to use to get a true red velvet red. Unfortunately they’ve discontinued it, (boo, hiss), and my future red velvets will have to be a bit less vibrant.
Rather than using cream cheese frosting, I stuck with my cream cheese/whipped cream frosting as per the Mocha Frappuccino Cupcakes and it blended well with the red velvet flavour. Decorated with a handful of Valentines-related symbols; roses, hearts and chocolate! What more could you want?
