Gin & Tonic Cupcakes

A birthday treat in the form of a Gin & Tonic cupcake – vanilla and lime sponge soaked in gin and topped off with a zesty lime swiss meringue buttercream.

For the cupcakes
  1. 200g plain flour
  2. 220g caster sugar
  3. 1tbsp baking powder
  4. 65g unsalted butter
  5. 1tsp vanilla extract
  6. 2 eggs
  7. Zest of one lime
  8. 60ml tonic water
  9. 180ml gin (roughly 1 tbsp per cupcake - for soaking)
For the frosting
  1. 3 egg whites
  2. 200g caster sugar
  3. 200g unsalted butter
  4. Juice of 1 lime
  5. 3tbsp gin
For the cupcakes
  1. Preheat the oven to 180 degrees
  2. Sift together the plain flour, baking powder and caster sugar. Add the butter and combine until a breadcrumb-like mixture forms
  3. Add the eggs, vanilla extract and lime zest, then combine
  4. Pour in the tonic water and mix until the batter comes together
  5. Separate into cupcake cases, filling to about two thirds full, bake for 18 minutes.
For the frosting
  1. Whilst the cupcakes are cooling, make the frosting by placing the egg whites and sugar in a glass bowl over a pan of simmering water
  2. When the sugar has dissolved and the mixture reaches 60 degrees, remove from heat and pour into a mixing bowl
  3. Using a balloon whisk, mix the egg whites at high speed until it doubles in size
  4. Slowly add cubes of butter piece by piece, until well combined (the mixture may begin to look curdled, but keep mixing until it comes together)
  5. Add lime juice and gin and continue to mix until it is well combined
  6. Soak each cupcake in a tablespoon of gin (or more if you wish!), then top with the frosting and a grating of lime zest
