Gin & Tonic Cupcakes
A birthday treat in the form of a Gin & Tonic cupcake – vanilla and lime sponge soaked in gin and topped off with a zesty lime swiss meringue buttercream.

For the cupcakes
- 200g plain flour
- 220g caster sugar
- 1tbsp baking powder
- 65g unsalted butter
- 1tsp vanilla extract
- 2 eggs
- Zest of one lime
- 60ml tonic water
- 180ml gin (roughly 1 tbsp per cupcake - for soaking)
For the frosting
- 3 egg whites
- 200g caster sugar
- 200g unsalted butter
- Juice of 1 lime
- 3tbsp gin
For the cupcakes
- Preheat the oven to 180 degrees
- Sift together the plain flour, baking powder and caster sugar. Add the butter and combine until a breadcrumb-like mixture forms
- Add the eggs, vanilla extract and lime zest, then combine
- Pour in the tonic water and mix until the batter comes together
- Separate into cupcake cases, filling to about two thirds full, bake for 18 minutes.
For the frosting
- Whilst the cupcakes are cooling, make the frosting by placing the egg whites and sugar in a glass bowl over a pan of simmering water
- When the sugar has dissolved and the mixture reaches 60 degrees, remove from heat and pour into a mixing bowl
- Using a balloon whisk, mix the egg whites at high speed until it doubles in size
- Slowly add cubes of butter piece by piece, until well combined (the mixture may begin to look curdled, but keep mixing until it comes together)
- Add lime juice and gin and continue to mix until it is well combined
- Soak each cupcake in a tablespoon of gin (or more if you wish!), then top with the frosting and a grating of lime zest
