Snickerdoodle Bites

Snickerdoodles are one of my favourite snacks, but they can be quite time consuming to make, so when I came across a recipe on Averie Cooks for Snickerdoodle Bars, it was the answer to my Snickerdoodle laziness. These bitesize bars taste exactly like Snickerdoodles without the need for creaming and chilling the dough, then making individual cookies. In fact, I did it all in one bowl – anything to cut down on washing up afterwards!

These Snickerdoodle bites contain the best bit of a Snickerdoodle – the soft, gooey centre, it’s somewhat similar to a brownie. Cinnamon and sugar are sprinkled generously across the top before baking, giving it that classic Snickerdoodle taste. I have modified the original recipe slightly to my taste, but the original can be found in the link below.

You can, of course, cut them to any size pieces you’d like, but I found the bitesize ones were the perfect size for a mini snack!

Snickerdoodle Bites

For the batter
  1. 115g unsalted butter, melted
  2. 1 large egg
  3. 115g caster sugar
  4. 75g light brown sugar
  5. 1tsp vanilla extract
  6. 130g plain flour
  7. 1/4tsp cream of tartar
For sprinkling
  1. 30g granulated sugar
  2. 2tsp cinnamon
Instructions
  1. Preheat the oven to 180 degrees and line a pan with baking paper (I used a 20x25cm pan)
  2. In a large bowl, melt the butter in the microwave (be careful not to burn it!)
  3. Let it cool for a few minutes before adding the egg, sugars and vanilla, whisking until smooth
  4. Sift in the flour and cream of tartar, stirring until just combined
  5. Pour the batter into the prepared pan ensuring it's smooth all over
  6. Mix together the granulated sugar and cinnamon, then carefully sprinkle over the batter evenly
  7. Bake for 25 minutes, insert a skewer to check it's done, it should come out clean
